Costa Rica’s ferias de agricultures (farmers markets), stalls are piled with glistening fruit, including exotics such as guanabana, mango and passion fruit. Gallo Pinto (fried rice and black beans) is the dish most associated with Costa Rica. It is commonly served as breakfast with scramble eggs and slabs of local Monte Verde cheese. At lunch it becomes arroz con pollo with lightly seasoned stewed chicken or pork. This forms the basis of casados (set meals), served with vegetables such as carrots, yucca, cabbage, onions, plátanos (fried plantain), and a simple salad of lettuce, tomatoes, and hearts of palms. Rice dishes are enlivened by a splash of Lizano, a mildly spicy sauce of vegetables.
